Ingredients~
- 6 oz brown rice noodles
- 2 tsp oil- safflower
- 500 grams or 1 lb chicken breast, cubed
- 2 cloves garlic chopped
- 2 cups bok choy chopped
- 2 cups mandarin oranges (drained)
- 1 Tbsp low-sodium soy sauce
- 1/2 tsp red pepper flakes and pepper
- 1/4 cup green onions chopped
- 2 Tbsp cilantro
Instructions
- Cook Noodles
- In a large skillet heat oil , add chicken and garlic and cook stirring for 3-5 mins until chicken is golden brown
- Add 2 cups of bok choy and cook for 2 mins.
- Add oranges, soya sauce and spices
- Bring to a simmer and cook 3-5 mins until chicken is cooked and oranges break down
- Remove from heat and stir in green onions and cilantro
- Serve over noodles
