Coconut Lime White Chicken Chili

Description

An easy and delicious white chicken chili that can be made in the slow cooker or the Instant Pot.


SCALE

Ingredients

  • 3 boneless, skinless chicken breasts
  • 1 (13.5 ounce) can coconut milk
  • 1 (12 ounce) jar salsa verde
  • 2 (14 ounce) cans white beans, rinsed and drained
  • 2 cups frozen corn
  • 1 (4 ounce) can diced green chilies
  • 1 1/2 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 lime
  • diced avocado and/or tortilla chips for topping ((optional))

Instructions

FOR THE INSTANT POT:

  1. Place everything up through the salt into the instant pot, seal, and cook on high pressure for 12 minutes.
  2. Let natural release for 10 minutes then remove chicken, shred, and return to pot. Stir together and add a squeeze of fresh lime juice. Serve as is or with avocado and chips.

FOR THE SLOW COOKER:

  1. Place everything up through the salt into the slow cooker and cook on low for 4-6 hours (or high for 2-4).
  2. Remove chicken, shred, and return to the slow cooker. Stir together and add a squeeze of fresh lime juice. Serve as is or with avocado and chips.

Crockpot Potato Soup with Sausage and Corn

ingredients

  • 14 oz polish sausage, sliced into 1/2 inch
  • 2-3 russet potatoes, peeled and diced into small cubes
  • 2 1/2 cups frozen corn
  • 2 Tablespoons minced garlic
  • 2 Tablespoons minced onion
  • 1 Tablespoons onion powder
  • 2 Tablespoons Mccormick pink salt, pepper and garlic (or 2 tablespoons of salt and pepper)
  • 1 teaspoon season salt
  • 3 cups vegetable broth
    • ingredients to add later:
    • 2 cups milk
    • 2 Tablespoons corn starch
    • 1 cup sour cream
    • 2 cups cheddar cheese

Instructions

Add all ingredients into a slow cooker and cook on high for 5 hours or low for 8 hours.
** 30 minutes before you are ready to eat**
Over medium to low heat whisk together 2 cups milk plus 2 Tablespoons corn starch. Once it begins to thicken set it aside.
Add 1 cup sour cream and 2 cups cheddar cheese to the crockpot. Then add the thickened milk to the crockpot. Stir all together. Let sit for 30 minutes and then serve.

Buttery Crockpot Ritz Chicken

Crockpot Ritz Chicken recipe

ingredients

  • 6 chicken breasts
  • 1 10.5 oz cream of chicken soup
  • 1 cup sour cream
  • 1 T salt
  • 1 T pepper
  • 1 T parsley
  • 1/2 cup butter, melted
  • 2 sleeves ritz crackers (1 now and 1 later)

instructions

Grab your crockpot and spray with cooking spray. Then place chicken breasts inside.
In a bowl mix together cream of chicken, sour cream, salt, pepper, and parsley. Mix it together and then top the chicken with the mixture.
Melt the butter and then crush 1 sleeve of ritz crackers. Combined together and then sprinkle mixture over the sauce.
Cook on low for 6-8 hours.
Right before you serve I like to crush up another sleeve and add it to the top of the chicken to give it a little more crunch. Then serve.

Crockpot Bone In Turkey Breast

 Servings 8 people

Ingredients

  • 1 whole turkey breast bone-in
  • 2 t garlic salt
  • 1 t paprika
  • 1 t onion powder
  • 1/2 t dried thyme
  • 1 t italian seasoning
  • 1/2 t cayenne 
  • 1/2 t black pepper

Instructions

  1. Combined all spices and place turkey in a crockpot and then rub all over the turkey breast. Cook on low for 8 hours. Preheat oven to broil at 500 degrees F. Remove turkey and place in a roasting pan or in a oven safe baking dish. Place under the broiler for 10 minutes or until the skin of the turkey turns golden brown. Let meat rest for at least 10 minutes and then slice or shred!

The BEST Crockpot Hawaiian Pork Tacos With Pineapple Mango Salsa



EASY Hawaiian Pork Tacos

2-3 lb pork roast (you can substitute for beef roast if thats more your style)
1 cup pineapple juice (or the juice from 1 can of pineapples)
1/2 red bell pepper (de-seeded and diced)
1 jalapeno (de-seeded and diced)
1/2 medium purple onion (diced)
Cook on high for 4-5 hours or low from 7-8 hours in the crockpot. Then shred.
Other:
Corn tortillas
cheese
Use to assemble tacos

Pineapple Mango Salsa

1 can Pineapple chunk (you can use the same one you took the juice from above) or 1 fresh pineapple
1/2 red bell pepper (de-seeded and diced)
1 jalapeno (de-seeded and diced)
1/2 medium purple onion (diced)
1 mango (diced)
1/4 bunch of cilantro (chopped)
juice of 1 lime
salt to taste
Combine all ingredients and then serve on top of the tacos!

Chicken Sweet Potato Stew
    Ingredients
    Instructions
    1. Heat a nonstick skillet over medium heat and cook the turkey bacon for about 5 minutes, until browned. Remove the bacon from the pan and drain on paper towels. 
      Add the chicken breasts and cook for 3 to 4 minutes or until browned on one side. 
      Turn each breast over, add 2 tablespoons of the chicken broth, and cook for an additional 3 minutes. 
    2. Put the bacon and chicken in a slow cooker and then add the remaining ingredients. 
      Cook for 3 to 4 hours on high or 6-8 hours on low. 
      Add additional chicken broth to the stew to reach desired consistency.
