90 Minute Bread


Bake 375°
40 minutes

4 cups warm water
4 teaspoons salt
4 tablespoons oil
7-8 cups flour (or more)
4 tablespoons yeast
8 tablespoons sugar

Dissolve yeast in one of the four cups of water with sugar.  Mix the salt and oil with the remaining 3 cups of water.  Add flour to yeast mixture gradually.  Knead. Dough is soft, not sticky.  Let double, cut into pieces, place in pans and allow to rise again.  Grease pans.


Alternate Method

4 cups warm water
4 teaspoons salt
(one more teaspoon if over half whole wheat)
4 tablespoons oil
7-9 cups flour (or more)
4 tablespoons yeast
½ cup honey

Dissolve yeast in warm water with honey, allow to rest until yeast bubbles.  Add salt and oil.  Add flour one cup at a time.  Use at least half the flour as whole wheat flour, but can be more.  Knead, allow to double.  Cut into four pieces, place in pans allow to rise again.  Grease pans, bake.
