Turkey Sausage

2 lbs. 99% fat free ground turkey
3/4 c. applesauce
1 T. olive oil
3/4 tsp. rosemary, ground
3/4 tsp thyme, ground
1 1/2 tsp. sage
1 tsp black pepper
1/4 tsp cayanne
1/4 tsp red pepper
dash of fresh grinded pepper
3/4 tsp salt

Combine all ingredients.  Divide into four equal portions, each portion makes 4 pattties.  Take squares of wax paper & put a spoonful on it & make it into a patty.  Spray a pan, cook on each side 3-4 mintues. 
You can freeze the rest into patties or quadrants.  Can cook them straight out of the freezer.
